Has anyone else heard this rumor? The last WAPA downgrade mentioned that one of the rum companies was below expectations.

Couldn't find anything via an internet search. Cruzan Rum is a subsidiary of Beam/Suntory. I highly doubt it is closing down, although I suppose anything is possible.

"St. Croix someday!"

My interpretation is that though rum consumption worldwide is down, the distilleries in the Caribbean are part of the culture and probably won't close anytime soon. IMO they need to strongly promote cooking with rum. I see various posts for flavored rum cake recipes that people are making at home. I fell in love with Bananas Foster in New Orleans. Create recipe for Adult Banana Pudding. I have a recipe for Coconut Shrimp that uses coconut rum.

Alcohol consumption period is down worldwide - except (interestingly) in the US. Google, "cruzan rum cooking recipes" and you'll come up with hundreds of recipes and ideas. Rum cakes have abounded commercially for years as well as in the home kitchen (in fact I just made two the other day)! Used to make Bananas Foster at the pub - another very simple recipe and totally heavenly.

The stores need to encourage and give cooking recipes. There is a cookbook by a local author, "Just Add Rum", which should be in the rum section of every liquor department. In the fall recipes for rum balls should be given free. Nice gift that doesn't take much effort.

The VI is mostly marketing with 20th century mentality and trying to sell 20th century goods.

I disagree. Hard copy cookbooks are becoming passé. Pre-21st century is cookbooks. Anything culinary which interests you can be found on the internet. I'm an avid cook and have been since I can remember but no more cookbooks when everything I need to find is right at my fingertips.

As long as she's publishing the cookbook, it should be sold in liquor department in addition to souvenir section. Suggest a dish and give a printed recipe with purchase. The calendars with recipes are very popular. Good salespeople give you ideas.

I got a cookbook today and am loving it, though I usually get recipes online.

I have post cards with recipes from BVI and Dominica. Not that I've made the dishes, but I fantasize about making them.

I am more inclined to buy a food product if there's a recipe included.

Then maybe you should contact the author and suggest she should look into that.

Devil's Food cake made with a can of cherries added to the mix and with Cruzan Black Cherry rum substituted for water is awesome. When it's cooled off, melt sugar and butter and, when cooled down a bit, add a load of the cherry rum to make an intoxicating glaze. "Fork" the cake liberally and slowly drizzle the glaze over the cake and let it ooze into all the holes. Rum cakes can be frozen indefinitely but will also keep for minimum one year on the shelf.

Decadent and wreaks total havoc on any weight-control or loss diet, particularly since one piece just isn't enough. big grin I make these sorts of things for dinner parties when I can be pretty much assured that only a very small amount will be left over - or cut them up and gift to friends and neighbors!

How about a pina colada version? That would be delicious with real coconut and pineapple in it as well as the flavored rum.

Or a cruzan confusion version with every flavor thrown in??

Wait - here's another idea - a Mamawanna or Pappawanna spice cake!

One I've made (I've made so many combinations but there's always more to try)! I don't use fresh coconut or pineapple when cooking but toast shredded coconut for a nuttier taste and texture and use crushed pineapple - and the coconut rum, not pineapple.

Sounds so good! I'm thinking this is a budding food cart idea to have at the pier for when the ships come in!
