STX Need a couple things.... HELP me find them please :D

I need to find nitrate/phosphate free bacon. I've tried Annaly and theres no local bacon its just the prepackaged stuff. Maybe I am asking for too much but I was always able to get it in STT at gourmet gallery. I don't care what it costs. Would LOVE to buy local bacon. I get all my meat at Annaly including pork but they don't have bacon... I don't get it.

I also need a restaurant supply store - need a dozen oil bottles for my flavored oils - broken most of them. Kmart had these but they are discontinued and I don't like the look of the cruets and cant do the $20 ones at the nice stores.

Need tapioca flour - I feel like it should be here somehwhere as red mill makes it and we have that brand of coconut flour and almond flour. Also flax meal and - grass fed butter. Like the bacon I've looked at kmart, CUL, Plaza, Quality foods, stop and shop. I can order it if I have to but really finding I am super limited to GOOD heathy ingredients here. STT was just a trip to gourmet gallery. It cost a fortune but then again so does cancer - so we try to eat pretty clean and last month I started paleo diet which is really strict about additives. WHAT a difference - I feel like a million bucks and lost a bunch of weight.

Thanks in advance.

Buying bottles for things like oils, tinctures, sauces, etc. at retail is an exercise in frustration. (Believe me, I've been there.) Most of the herbalists/saucemakers/handmade cosmetics folks I'm aware of order them online from places like Specialty Bottle, Wholesale Supplies Plus, SKS Bottles & Packaging, and similar manufacturers/distributors. It looks like shipping here shouldn't be a problem from checking their sites -- I'm pulling together some ordering at the moment, so I'll let you know if there are problems.

With regard to uncured bacon, well, if you have a smoker you can make it yourself, as long as you are flawless in handling and smoking it at appropriate temperatures (NO low-temp smoking, which as far as I can tell is impossible here without a commercial gear setup anyway) at every step of the process. I've been making bacon (insert joke here) for about five years and I use curing salt (ordered online and shipped here no problem). As the smoker just got here and I broke it in with some chile beef jerky, after the pork shoulder I'm thinking about a big batch of bacon. Need to source pork belly though. smiling

Hey A&A plaza east has some of what you are looking for. I had to go there on the way home so I looked specifically for: tapioca flour (located at the bottom of an end aisle around the corner from the section with all the bobs red mill stuff), bobs red mill flax seed meal (with other red mill stuff in the cereal aisle) and grass fed butter - anchor butter which I googled to find out if it's grass fed and from what I cound, it is. Hope they are all still there when you go!!

See Cats posts.
She cures her own bacon with cure(which is prague powder #1 curing salt which is sodium nitrate).
There are as she points out other ways but there a bit more difficult.

curing without nitrates

A good place to start with bacon is the book "Charcuterie" by Mark Ruhlman and Brian Polcyn. If I recall correctly (my copy is still, alas, in a box inside a box inside a pile of other boxes) they explain how to make uncured bacon as well as the standard type, and how it can be made using a grill or oven instead of a smoker. It's an absolutely terrific book that covers a LOT more than just bacon and sausage!

Uncured bacon at Seaside Market or Food Town. Best to shop on Tues. afternoon, Wed. morning, at the latest.

FYI, CUL has no hormone/antibiotic beef and Plaza has frozen h/a free chicken breasts. Food Town often has h/a free chicken, "previously frozen".

You will probably be interested in a visit to Health Conscious in Castle Coakley.

Plaza West sells the Applegate Farms regular bacon and Sunday bacon, as well as turkey bacon. It's nitrate and hormone free. They used to sell the packs individually but I noticed now they are selling it in packs of 3, I recently purchased the Sunday bacon for $16.99 for 3 packs.

I DID find Applegate at Plaza! I bought All they had the first time - four of those packages. Last week bought another 4.

Speedy - its 16.99 for three HALF pound packages. Not terrible but not cheap either. I wont complain at all because I am super happy to have "healthy" bacon. Tastes totally better and I don't feel as bad eating it. I tried the pork shoulder bacon and dint like it as much. Sadly it looks like I am allergic to some preservatives in food. Working with Dr. to figure it out.

All CUL beef is grain fed. My diet necessitates grass fed beef and butter. No dairy. sad smiley

Thanks Islandjoan for thinking of me smiling I did in fact find the grass fed butter and bought $100 worth lol!! We use a fair amount in my diet but I wanted to make sure I was stocked up in case they don't have it next time.

I love Quality - really do but I tried twice over the last three months to get them to order - or at least find out if they can get me bacon and they never returned calls or emails. I went in and talked to them about it. I ain't hatin thou - LOVE those local tiny tomatoes and they have great prices on canned shelled crab and those sweet potato fries!!!! SO GOOD. Kind of addicted to those - baked w sea salt. MMM - great now I'm hungry!
