Thanks Bombi, we laugh about it because both Tavia and I look like we got goosed from behind, or just drank a bunch of espresso.

My sous chef (other guy in the photo) left for the states for shoulder surgery so I've been flying solo until his replacement zooms in this Sunday.

I still want to get some sort of cooking class going, and I think about it daily, but I'm definitely too busy to pull it off right now.

a suitable kitchen on stx would be at carambola beach resort ,their kitchen is big like a small warehouse,talk to jacque the GM, i'm sure there would be liability issues that would need to be resolved,but hey it would be worth a try,their sous,brian is a foodie,he'd probally want to get involved as would brian and sarah from zebos

and i would love to see some of the young foodie chefs try to get on top chef,the publicity for STX would be great

trw, I was lucky enough to have Sarah come and work a few shifts with me at Salud last week. Those guys at Zebo's got skills!

Funny you mention Top Chef, that's my favorite show! Two years ago when I was in Denver, I filled out the 28 page application but never filmed the 5 minute video to accompany it. I think Dale should have won last year, he was the best.

My new sous chef just arrived on island Sunday so I'm excited for the next season. My first goal is a day off, but the cooking class is still simmering.

So Noah, last night at Salud, I had the duck confit appetizer. OMG!!! To die for. Was that yours or the new sous chef? If you teach that recipe in your cooking class, sign me up. Better yet, let me know when it's going to be on the menu again!

Juanita, that would be my sous chef. His name's Doug and he does the app specials. I focus on the entrees.

trw, where's your work? What's the confit prep? Can I come harass you?
