Do land crabs have a similar taste to sea crabs or is the salty taste missing?
No pun intended but to me they have a more "earthy" taste, a cross between the taste of an escargot and that of a sea crab.

You can't just eat a land crab without purging by feeding them prior to eating them.
Could make you sick as you don't know what they have been eating out in the bush.
Hermit crabs aren't worth eating at all so don't try.

Hermit crabs were what we used as bait when fishing as kids.
At least, the fish liked them!
