are there lots of trails or areas to go hiking day hikes or overnught?

St John is full of hiking trails as it is mostly national park. There is a great National Geographic map that shows them (available on this site-see above). For St Croix, read throgh FOG's posts ("Former Ohio Guy") here. He should do a map/guidebook! Not many on St Thomas, although there are a few.
