OldTart I thought of you when I was making "Bubble and Squeak" this morning. I put a link for you that has a good recipe. Hope you enjoy the article! My version was delicious. *-)

Thanks - that's certainly a rather time-consuming "gourmet" version! Have to disagree with the author that the traditional is made with Brussels sprouts. Although there are certainly regional variations, it was always cabbage when I was growing up. Basically a simple dish of left-overs - cooked cabbage and mashed potatoes mixed up together and fried in hearty beef drippings from the Sunday roast!

OldTart......I had to laugh because I used cabbage in my version. 😀
