I just made these burger buns today and they turned out great! Another one of my favorite recipes is Italian Bread:

I do not use cake yeast though. Instead, I use 6 tsp of yeast. After the yeast has proofed, I like to add herbs, garlic, and/or sun dried tomatoes for an extra flavor 🙂

I also make my own pizza dough and bagels. I have never used a bread maker. I live the process of kneading 🙂

I buy yeast in the big package for around $5 from Cost U Less and it typically lasts me 6 months making bread 3-4 times/month. And of course making your own bread is cheaper than buying from the stores! Not only is it cheaper, it is healthier and much better tasting! I do store the bread in the refrigerator because it will mold quickly here. The prepackaged bread is full of preservatives and doesn't mold as fast 🙁

If you are having trouble getting your bread to rise and are getting a resulting dense bread, you either killed the yeast, kneading too short or too long, or did not let it rise adequately. I find that the humidity and warm weather makes the bread making process super easy. All of my breads rise very fast and turn out light and fluffy.

I am curious about your pizza dough, is it nice and thin with a crispyness to it or is it thick and chewy

I have a few types of pizza dough that I make. My grilled pizza dough recipe is very thin, crispy and flaky. I have a recipe for thick crust which is light and airy and sometimes I use Foccacia recipes for thick dough. I recently found a recipe for flatbread pizza that is wonderful!

If your dough is coming out thick and chewy, your yeast may not have activated enough or you may have kneaded it too long. Make sure you let the dough rise after rolling it out before putting any toppings on it.

I am in the process of moving to a new house (closing is next week!) and my cookbook is packed. I will send you the flatbread recipe once I unpack the box.
