I hear and read this all the time on new rentals that become available. I hear it's like a studio apartment, but there has to be some reason why they don't just call it a studio. The term efficiency doesn't sound very inviting. So can someone tell me what exactly an efficiency apartment is and how it differs from a studio?

Same thing. Just like "soda" in one area of the country is "pop" in another, a studio and efficiency are basically the same thing - one large room, small kitchen area and separate bath.

Thank you, I have been wondering that since I moved here. Had visions of a sink and a bed side by side and all.
