RUM CAKE

1 Box Butter Recipe cake mix ( Devilsfood) or Yellow
1/2 Cup chopped pecans
Small package instant chocolate pudding mix
1 stick butter softened
4 eggs
½ cup rum
½ cup crisco oil
½ cup water

GLAZE

1 stick butter
1 cup sugar
½ cup rum – recipe calls for ¼ but I use ½

Oven 325 degrees

Grease bundt pan and sprinkle pecans in bottom of pan. Mix together dry ingredients. Add remaining ingredients and beat for 3 minutes. Pour gently into pan and bake for 55 minutes.

GLAZE

Just before cake comes out of oven, boil 3 ingredients for 3 minutes while stirring. Remove from heat. When cake comes out of oven let sit for a minute or two until it settles . Pour hot glaze over cake and let sit in pan for at least an hour. (You can let it sit all night) turn over pan on plate.

You can google Bacardi Rum Cake recipe. It's one of my favorites, but I make it with Cruzan. The last time I was in NC, I actually found one dusty 1.75 bottle of Cruzan Gold on the bottom shelf of the little county ABC store. It was under $20. Really surprised me.
