Bill Collins has had the market pretty sewn up on STT for many years (decades) while scores of others have come and gone.

Hull Bay Hideaway has good ribs but they are not consistent. One time, they'll be fall off the bone tender and the next so tough I end up giving to my dogs (meat only, no bones) as chew toys. Off the Grid, at the hilltop entrance to Sapphire isn't bad tho prefer Texas Pit by Fruit Bowl even if their prices have just gone up plus I don't have to drive all the way to east end.

you could be flip flop. we dont have a good texas style bbq joint on stx . we have blues backyard which is good but not the same

Quite a few restaurants for sale in STT.
That's probably the case in STX as well.

No bbq on STT compares to Lechon King in my opinion. He is only there in his truck Saturday mornings. Not exactly Texas bbq but the man makes the best brisket I've ever had. His pork is quite amazing as well

Lechon King is open most of the day on Saturday until the food runs out. He at least usually has vegetables as a side option on his menu.

But, I don't consider it BBQ. It's Puerto Rican seasoned, smoked, roasted meat. No sweet/salty bbq sauce. Lechon is lechon and BBQ is BBQ.

You never know what to expect when you order food these days, because there are so many variations of familiar dishes.

Please don't get me started on tacos.
