Anything that takes a lot of sun and can tolerate the heat. That varies by variety within each species in terms of heat resistance, so if you're looking to grow your own, check with the seed company.

We buy plants at the Farmers Market, not expensive and easier than seeds. Basil, dill, parsley and rosemary do well for us.

over here on STT I have had luck with mint, rosemary, basil....just about all of them, but not thyme for some reason....I think it would be the same as growing it in the states, full sun.

It seems like thyme must not particularly like our climate, because it's hard to find on a regular basis here (STX). It's frustrating, because it's the main ingredient in the tea I use to treat colds, coughs, and sore throats. I do a lot of herbal stuff, and I'm still figuring out what of it I can get here.
