Island recipes

I'm trying to find the recipes for maubi drink, and pate' not the stateside thing, the saltfish pate' and ground beef one. I'm from st thomas, but lost my book I wrote my stuff into, dying for some maubi. Thanks, also if anybody have any old stories of the island or jumbi stories, you know like the cowfoot woman behind the school down the road from the graveyard, I miss home, Thanks

Maubi:

Recipe is from Mildred V. Anduze's Island Cook Book

1 oz. sweet marjoram
1 oz. rosemary
Maubi bark
Fresh orange peel grated
3 lbs. sugar
1 oz. anise
Cinnamon stick (3 inches)
Grated nutmeg
1/2 cake yeast
1 gal. water

Boil bark and herbs in one quart of water to make "bitters". Fill another container with gallon of water and sweeten with sugar. Add the bitters, then toss mixture with a dipper. When it begins to foam add yeast. Strain through a clean cloth and bottle. Let mixture stand over night.
