Don't know about STT, but on STX we have a large population of vegetarians and many foods are available in the regular groceries. I shop in Plaza Extra and see a much larger selection than I ever saw in the states.
Starting a business here is tricky. I strongly suggest you arrange to come down for a month or 6 weeks to really get the feel of the VI before making any business plans.
