Favorite Authentic Caribbean recipes

I am hosting a dinner party and thought I would have a Caribbean themed dinner... Anyone have a good recipe they would like to share? I do have a pina colada rum cake planned, but that's it!

This is really good & comes from Angela Spenceley's "Taste of the Caribbean"

VIRGIN ISLAND DAUBE MEAT
3-5 lb pot roast
2 TBL olive oil
1 TBL salt
1 TBL coarsely ground pepper
1/4 tsp nutmeg
1/4 tsp mace (I omit this as I never have it)
1/2 tsp dried thyme
1 large onion, chopped
1/2 stalk celery, minced
1 TBL freshly chopped parsley
1 large ripe tomato, chopped
1 TB: vomegar
Water

In a large deep stew pot brown themeat on all sides w/the olive oil. Add the remaining ingredients & cover meat with the water. Simmer until meat is tender, but not coarse & dried out. Serve with baked sweet potatoes & fried plantains. (Really smells wonderful while it's cooking also.)

Trade, add some red wine and crushed tomatoes and it sounds like we've got an Italian pot roast.

You're right, Promoguy or omit all the spices & it's just a plain old pot roast but this version is really good. BTW, sorry about the typo. That last ingredient should be 1 TBL vinegar.
