OMG, Trade! Me, too! Rolls are easy! Turkey is difficult- and makes the house hot!

BTW, Christmas is coming and you know what that means!;)

Happy Thanksgiving to all you. I have so many blessings and you guys are one of them. There are times that only you folks keep me reasonably sane!

Am trying my hand at a guinea hen today. I figure anything you have to wrap in bacon and baste in butter can't be too bad ... well for anything but your arteries.

Bacon & butter make everything better. Hope it turns out well. I don't think I've had guinea hen since I was a kid & that was a lonnnng time ago. Where did you find it?

Used to be able to get capons but I can't remember seeing them here.

EE, Turkey is EASY...wash it, salt and pepper it, smear with butter and put it in a pan, topped with foil.

Now, rolls, on the other hand.....You have to knead them just right, let them rise to just right, knead again, etc., and that's assuming you got the ingredients right. I'll take the turkey, anyday.

But since I have wonderful friends, who like to cook, I don't have to do either.:D

Rolls are easy if you don't kill the yeast with too hot water. I'm trying a new recipe so I hope they turn out. My Mom was famous for her yeasty cloverleafs & it's one thing I can do well usually but I suck at pie crust which she was also famous for. I do hope my friends send me home with enough turkey for a sandwich tomorrow. I like that better than the original dinner.

Happy Thanksgiving to all. Prime rib is on the menu today,someone else is cooking. All We have to do is show up and drink. But we always end up helping out.

Turkey is easy, Use a turkey bag(always moist & tender, & you don`t have to fuss with it).
Cut the veggies you want, stuff the bird(remove neck & gibbets first).
Dry rub salt(a couple days in advance). pepper, you can use butter or olive oil to coat the skin, we usually use the oil from the spicy sausage we use in the stuffing ;).
Use some paprika(it will brown the turkey even for presentation).

And, a little garlic never huts anything!

The guinea hen, purchased at Food Center, was excellent. It all started as a joke when we were having such a tick problem. I researched on line for natural ways to control ticks and the best I could find was to raise guinea fowl. It became a lively topic of conversation so when I saw one at Food Center it had to come home with me. It amused the hubby and was really quite tasty.

Skipped the lard, salt pork and bacon. Rubbed it with salt and pepper, squeezed half a lemon and placed the other non squeezed half inside the bird along with the squeezed half and some rosemary sprigs. Surprisingly tender and tasted a lot like turkey! Was expecting chicken. Don't think I will cook it again but it was a fun adventure and only took 1 hour 10 minutes to cook.
