Health Insurance, Business verus Non Profit

Soon to be permanent residence, land owners and built a facility, moving my current LLC to the island. However by business is better qualified as a non profit 501c3, so I would like to establish that prior to moving to the island from the states.

Can I still have a group insurance plan for my employees? (Im in education and animal welfare, but receive most of my funding from online- not through government grants).

Do you have at least one employee who works a minimum of 30 hours a week for at least minimum wage?  That has been the benchmark for all the places I have asked.
