We don't use the different parts of a chicken (like the thighs, legs, breasts or back). We just use premium super light tenders that are located between the two breasts and wings of course. The tenders deliver a pure chicken taste and texture without all the inconsistency or the grease. The problem sourcing 1 tender per chicken is that we'd have to alot of chickens to meet our requirements, which is why we'll have to go off island for that. We are using local suppliers as much as possible though.

If it's from off island, I doubt you can source "fresh, not frozen". For those of us who've lived on-island for a long time, this is an on-going problem.

There are so many running around Gallows Bay...why not start there?
